A Perfect Mix: Founding Farmers Chicken & Waffles
Guests come from all over to experience our Chicken & Waffles, and feedback continues to suggest that this dish is a restaurant favorite. We have to agree. This is comfort food at its tastiest, or as Chef Joe likes to say, “food that gives you a hug.” A perfect combination of sweet and savory, it’s hard not to love this soulful, Southern-inspired meal, which is good because it wasn’t the easiest recipe to develop.
This crispy, fried chicken took close to 100 attempts to perfect. The key to its tasty, super juicy goodness is threefold: using only the highest quality chicken; brining it for at least 24 hours; and frying it just the right amount of time, at just the right temperature.
The other offerings on the plate aren’t too shabby either. The scratch-made, deliciously creamy mac & cheese and a choice of one of our yummy crop list sides add to the hearty comfort of this dish. Bring on the homemade, farmhouse waffles served hot off the iron, and life doesn’t get much better. Then, there’s the syrup. We think pure maple is the only way to go. Most of ours comes from the Adirondacks in Upstate New York, in our sweet partnership with Cornell University’s Maple Program.
